Ingredients
3 eggs
1 c white sugar
1 c buttermilk
1/3 c vegetable oil
1 (3.5 oz) package instant vanilla pudding mix
1 (18.25 oz) package butter cake mix
1/2 c butter
1 tsp vanilla extract
1 c flaked coconut
3 egg yolks
1 (12 fluid oz) can evaporated milk
1/3 c unsweetened cocoa powder
1 c sliced pecans
Directions
Step #1 Preheat oven to 350 degrees F (175 degrees C).
Step #2 Grease & flour three 8 inch round cake pans.
Step #3 Combine the cake mix, cocoa, instant vanilla pudding, buttermilk, vegetable oil & the 3 whole eggs.
Step #4 Mix until mixed & pour the batter into the prepared pans.
Step #5 Bake at 350 degrees F (175 degrees C) for 20 to 25 mins or until the cakes test done.
Step #6 Set cakes aside to cool.
Step #7 In a medium sized sauce pan mix the evaporated milk, white sugar, 3 egg yolks & the butter.
Step #8 Cook over med-heat/flame until the mixture is thick.
Step #9 Remove from heat & beat until partially cooled.
Step #10 Beat in the vanilla.
Step #11 Stir in the flaked coconut & the sliced pecans.
Step #12 Use to fill & frost cake.
Step #13 .
