Huevos Rancheros With Zucchini And Green Pepper Recipe

Ingredients
  • 4 (6-inch) corn tortillas
  • 1/4 tsp ground cumin
  • 1/2 c sliced green bell pepper
  • 2 tsps sliced fresh cilantro
  •  Cooking spray
  • 1 (10-oz) can sliced tomatoes with green chiles, undrained
  • 1/4 tsp salt
  • 1 1/2 c sliced zucchini
  • 1/8 tsp freshly ground black pepper
  • 1 tsp olive oil
  • 4 large eggs
  • 1/3 c (1 1/4 oz) preshredded reduced-fat cheddar cheese
  • 1/4 c water

Directions
  • Step #1 Heat oil In a large-ish nonstick skillet coated with cooking spray over medium-high heat.
  • Step #2 Add zucchini & bell pepper; sauté 6 mins or until lightly browned.
  • Step #3 Add water & next 4 ingredients (water through tomatoes).
  • Step #4 Stir to mix.
  • Step #5 Cover up & let simmer 3 mins.
  • Step #6 Warm tortillas according to package directions.
  • Step #7 Break 1 egg into a small custard c.
  • Step #8 Slip egg onto tomato mixture; repeat procedure with remaining eggs.
  • Step #9 Cover up & let simmer 3 mins or until eggs are done.
  • Step #10 Sprinkle top with cheese.
  • Step #11 Cover up & cook 30 seconds or until cheese melts.
  • Step #12 Place 1 tortilla on each of 4 plates.
  • Step #13 Spoon 1 egg & 3/4 c tomato mixture onto each tortilla.
  • Step #14 Sprinkle top with 1/2 tsp cilantro.
