Spinach And Tomato Strata Recipe

Ingredients
  • 2 (14.5-oz) cans sliced tomatoes, drained & divided
  • 1 (10-oz) package fresh spinach
  • 3/4 c (3 oz) shredded reduced-fat Jarlsberg cheese
  • 16 (1-oz) slices sturdy white bread, cut in half
  • 3 garlic cloves, minced
  • 2 1/2 c 1% low-fat milk
  • 1/4 tsp black pepper
  •  Cooking spray
  • 1 tsp olive oil
  • 1/4 tsp salt
  • 5 large eggs

Directions
  • Step #1 Heat oil in a Dutch oven over med-heat/flame.
  • Step #2 Add garlic & spinach; cook 3 mins or until spinach wilts & liquid almost evaporates.
  • Step #3 Cool.
  • Step #4 Spread 1 can of tomatoes over the bottom of a 13 x 9-inch baking dish coated with cooking spray.
  • Step #5 Arrange half of the bread slices over tomatoes; top this with 1 can of tomatoes, spinach mixture, & remaining bread slices.
  • Step #6 Combine milk, pepper, salt, & eggs In a large-ish bowl; stirring with a whisk.
  • Step #7 Pour over bread slices; sprinkle with cheese.
  • Step #8 Cover up & put in the fridge 8 hrs.
  • Step #9 Preheat oven to 375°.
  • Step #10 Uncover strata.
  • Step #11 Bake at 375° for 50 mins or until set.
