Multigrain Pancakes Recipe

Ingredients
  • 1 tbsp vegetable oil
  • 1 c 2% milk
  • 1/4 c quick-cooking oats
  • 1 1/2 tsps baking powder
  • 2 tbsps brown sugar
  • 1/2 c whole-wheat flour
  • 1/4 c plain fat-free yogurt
  • 1 large egg
  • 2 tbsps yellow cornmeal
  • 1/2 tsp salt
  • 1/2 c all-purpose flour

Directions
  • Step #1 Combine first 7 ingredients; stir well.
  • Step #2 Combine remaining ingredients; stir well.
  • Step #3 Add to flour mixture, stirring until smooth.
  • Step #4 Spoon about 1/4 c batter for each pancake onto a hot nonstick griddle or nonstick skillet.
  • Step #5 Turn pancakes when tops are covered with bubbles & edges look cooked.
  • Step #6 Serve with maple syrup & low-fat granola, if desired.
