Creamy Veggie Omelet Recipe

Ingredients
  • 1/4 tsp pepper
  • 1/4 tsp salt
  • 2 tsps butter or margarine, divided
  •  Vegetable cooking spray
  • 3 tbsps soft cream cheese with chive & onion
  • 3 tbsps crumbled feta cheese*
  • 2 tsps butter or margarine
  • 1/2 small red bell pepper, sliced
  • 1/4 tsp pepper
  • 6 large eggs
  • 1 c sliced fresh mushrooms
  • 1 c sliced fresh broccoli
  • 1/2 small green bell pepper, sliced
  • 1/4 tsp salt

Directions
  • Step #1 Whisk together eggs, 1/4 tsp salt, & 1/4 tsp pepper; set aside.
  • Step #2 Melt 2 tsps butter in a small, heavy nonstick skillet coated with cooking spray over medium-high heat, rotating pan to coat bottom evenly.
  • Step #3 Add red bell pepper & next 5 ingredients.
  • Step #4 Cook, stirring often, 10 mins or until peppers are tender.
  • Step #5 Remove mixture from skillet; set aside.
  • Step #6 Wipe skillet clean.
  • Step #7 Coat skillet with cooking spray; add 1 tsp butter to skillet, & melt over medium-high heat.
  • Step #8 Add half of egg mixture.
  • Step #9 As egg mixture starts to cook, carefully lift edges of omelet with a spatula, & tilt pan so uncooked portion flows underneath.
  • Step #10 Flip omelet over.
  • Step #11 Sprinkle top 1 side of omelet with half of vegetable mixture.
  • Step #12 Dollop with half of cream cheese, & sprinkle with half of feta cheese.
  • Step #13 Fold in half.
  • Step #14 Cook 2 mins or until cheese melts.
  • Step #15 To make next omelet, egg mixture, repeat with remaining butter, vegetable mixture, & cheeses.
  • Step #16 Serve as soon as possible.
  • Step #17 Note: For testing purposes only, we used Philadelphia Soft Cream Cheese with Chive & Onion.
  • Step #18 * 1/4 c shredded Swiss cheese may be substituted.
