Weekend Morning Waffles Recipe

Ingredients
  • 1 1/2 c maple syrup
  • 2 large egg whites
  • 1/2 c soy flour
  • 2 c 1% low-fat milk
  • 1/2 tsp salt
  • 2 large egg yolks
  • 2 1/2 tsps baking powder
  •  Cooking spray
  •  Dash of sugar
  • 1/4 c vegetable oil
  • 1 1/2 tbsps ground cinnamon
  • 1 1/2 c all-purpose flour
  •  Whole strawberries (optional)

Directions
  • Step #1 Lightly spoon the flours into dry measuring c, & level with a knife.
  • Step #2 Combine the flours, baking powder, cinnamon, & salt In a large-ish bowl; stir with a whisk.
  • Step #3 Combine the milk, oil, & egg yolks; add to the flour mixture, stirring until smooth.
  • Step #4 Place the egg whites In a large-ish bowl, & beat with a mixer at high speed until foamy.
  • Step #5 Add the sugar, beating until soft peaks form.
  • Step #6 Fold the egg whites into the batter.
  • Step #7 Coat a waffle iron with cooking spray; preheat.
  • Step #8 Spoon about 1/3 c batter per 4-inch waffle onto hot waffle iron, spreading batter to edges.
  • Step #9 Cook 5 to 6 mins or until steaming stops; repeat procedure with remaining batter.
  • Step #10 Serve with syrup; garnish with strawberries, if desired.
