Cheesy Brunch Casserole Recipe

Ingredients
  •  Cooking spray
  • 1/2 tsp freshly ground black pepper
  • 2 c 2% reduced-fat milk
  • 1 lb turkey Italian sausage
  • 1/2 c fat-free, less-sodium chicken broth
  • 2 (8-oz) cartons egg substitute
  • 1 1/2 c (6 oz) shredded reduced-fat extra-sharp cheddar cheese
  • 5 c herb-seasoned stuffing mix (such as Pepperidge Farm)
  • 2 tbsps butter, melted
  • 1/2 tsp onion powder

Directions
  • Step #1 Preheat oven to 325°.
  • Step #2 Remove casings from sausage.
  • Step #3 Cook sausage In a large-ish nonstick skillet over medium-high heat until browned, stirring to crumble.
  • Step #4 Drain.
  • Step #5 Place sausage In a large-ish bowl; add stuffing mix, tossing to mix.
  • Step #6 Place stuffing mixture in a 13 x 9-inch baking dish coated with cooking spray.
  • Step #7 Drizzle stuffing mixture with broth & butter; sprinkle with cheese.
  • Step #8 Combine milk & remaining ingredients, stirring with a whisk; pour milk mixture over stuffing mixture.
  • Step #9 Bake at 325° for 40 mins or until set.
  • Step #10 Let casserole stand 5 mins before serving.
