Oat Bran Muffins Recipe

Ingredients
  • 2 c sliced Granny Smith apple
  • 1 thin-skinned orange, unpeeled & quartered
  • 1/4 c canola oil
  • 1 c raisins
  • 2 tsps baking soda
  •  Cooking spray
  • 2 tsps vanilla extract
  • 1 c fat-free milk
  • 3 large egg whites
  • 1/4 c flaxseed
  • 2 tsps baking powder
  • 1/2 tsp salt
  • 4 tsps ground cinnamon
  • 2 c shredded carrot
  • 1 3/4 c oat bran
  • 3/4 c packed brown sugar
  • 1 c whole wheat flour
  • 1 c all-purpose flour
  • 1/3 c nonfat dry milk

Directions
  • Step #1 Preheat oven to 375°.
  • Step #2 Lightly spoon flours into dry measuring c; level with a knife.
  • Step #3 Combine flours & the next 8 ingredients (all-purpose flour through salt) In a large-ish bowl, stirring well with a whisk.
  • Step #4 Stir in carrot, apple, & raisins.
  • Step #5 Combine milk, egg whites, oil, vanilla, & orange in a mixer or food processor/blender; process until smooth.
  • Step #6 Make a well in center of flour mixture; add milk mixture; stir just until moist.
  • Step #7 Spoon 3 tbsps batter into each of 28 muffin c coated with cooking spray.
  • Step #8 Bake in batches at 375° for 20 mins or until muffins are browned & spring back when touched lightly in center.
  • Step #9 Remove the muffins from pans as soon as possible, & place on a wire rack.
