Southwest Brunch Casserole Recipe

Ingredients
  • 2 c self-rising flour
  •  Chile-Cheese Sauce
  • 1/3 c vegetable oil
  • 12 large eggs, lightly beaten
  • 1/2 tsp chili powder
  • 1/3 c evaporated milk
  • 2 tbsps sliced fresh cilantro or parsley
  • 1 (16-oz.) package mild ground pork sausage
  • 1 1/2 c (6 oz.) shredded sharp Cheddar cheese or Monterey Jack cheese with peppers
  • 1 large egg, lightly beaten
  • 1/4 c sliced onion

Directions
  • Step #1 Cook sausage & onion In a large-ish nonstick skillet over medium-high heat, stirring until sausage crumbles & is no longer pink.
  • Step #2 Reduce heat to medium; add eggs, & cook, without stirring, until eggs begin to set on bottom.
  • Step #3 Gently stir this to slightly break up eggs.
  • Step #4 Cook, stirring every once in awhile, until eggs are thickened but still moist.
  • Step #5 (Do not overstir, as this will form small, dry pieces.
  • Step #6 ) Remove from heat; stir in the Chile-Cheese Sauce.
  • Step #7 Spoon into a lightly greased 13- x 9-inch baking dish; set aside.
  • Step #8 Stir together flour & next 4 ingredients until a dough forms.
  • Step #9 Turn dough out onto a lightly floured surface; knead 3 or 4 times.
  • Step #10 Roll dough into a 12-inch square; sprinkle evenly with shredded cheese & cilantro.
  • Step #11 Roll up, jelly-roll fashion, & cut into 12 (1-inch-thick) slices.
  • Step #12 Place dough slices over egg mixture, spacing evenly.
  • Step #13 Bake at 400° for 25 to 30 mins or until golden.
  • Step #14 Kitchen Express: Prepare sausage, egg, & Chile-Cheese Sauce mixture as directed; spoon into a lightly greased 13- x 9-inch baking dish.
  • Step #15 Top evenly with 12 frozen Southern-style biscuits.
  • Step #16 Bake at 400° for 25 to 30 mins or until golden.
  • Step #17 Note: For testing purposes only, we used Pillsbury Southern Style Oven Baked Biscuits, located in the freezer section of the supermarket.
