Potato Pancakes With Chive Yogurt Cheese Recipe

Ingredients
  •  Yogurt cheese:
  • 2 c plain low-fat yogurt
  • 1 tsp salt
  • 1/8 tsp freshly ground black pepper
  • 6 c shredded baking potato (about 2 lbs)
  • 1/3 c sliced fresh chives
  • 2 tbsps all-purpose flour
  • 1/4 tsp salt
  •  Potato Pancakes:
  • 2 large eggs
  • 1/2 tsp freshly ground black pepper
  • 1 c grated fresh onion
  • 2 1/2 tbsps vegetable oil, divided

Directions
  • Step #1 To prepare yogurt cheese, place a colander or sieve in a 2-quart glass measure or medium bowl.
  • Step #2 Line colander with 4 layers of cheesecloth, allowing cheesecloth to extend over the outside edge.
  • Step #3 Spoon yogurt into the colander.
  • Step #4 Cover up loosely with plastic wrap, & put in the fridge for 12 hrs.
  • Step #5 Spoon yogurt cheese into a bowl, & discard liquid.
  • Step #6 Stir in chives, 1/4 tsp salt, & 1/8 tsp pepper.
  • Step #7 Cover up & put in the fridge.
  • Step #8 To prepare potato pancakes, spread the potato & onion between several layers of paper towels; let this stand 15 mins or until barely moist, pressing every once in awhile.
  • Step #9 Combine flour, 1 tsp salt, 1/2 tsp pepper, & eggs In a large-ish bowl.
  • Step #10 Stir in potato & onion.
  • Step #11 Heat about 2 tsps oil In a large-ish nonstick skillet over medium-high heat.
  • Step #12 Spoon 2 tbsps potato mixture for each of 6 pancakes onto pan.
  • Step #13 Cook 2 mins on each side or until golden.
  • Step #14 Repeat procedure with the remaining oil & potato mixture.
  • Step #15 Serve the pancakes with yogurt cheese.
  • Step #16 Note: To freeze, let cooked pancakes cool completely.
  • Step #17 Stack in an airtight container between layers of wax paper, & freeze for up to 2 months.
  • Step #18 To reheat, place on a baking sheet.
  • Step #19 Bake at 350° for 15 mins.
