Step #8 To prepare potato pancakes, spread the potato & onion between several layers of paper towels; let this stand 15 mins or until barely moist, pressing every once in awhile.
Step #9 Combine flour, 1 tsp salt, 1/2 tsp pepper, & eggs In a large-ish bowl.
Step #10 Stir in potato & onion.
Step #11 Heat about 2 tsps oil In a large-ish nonstick skillet over medium-high heat.
Step #12 Spoon 2 tbsps potato mixture for each of 6 pancakes onto pan.
Step #13 Cook 2 mins on each side or until golden.
Step #14 Repeat procedure with the remaining oil & potato mixture.
Step #15 Serve the pancakes with yogurt cheese.
Step #16 Note: To freeze, let cooked pancakes cool completely.
Step #17 Stack in an airtight container between layers of wax paper, & freeze for up to 2 months.
Step #18 To reheat, place on a baking sheet.
Step #19 Bake at 350° for 15 mins.
