Strawberry Jam Crumb Cake Recipe

Step #1 To prepare crumb topping, lightly spoon 1/4 c flour into a dry measuring c; level with a knife.
Step #2 Combine flour, brown sugar, & cinnamon in a small bowl.
Step #3 Cut in 2 tbsps butter with a pastry mixer or 2 knives until mixture resembles coarse meal; set aside.
Step #4 Preheat oven to 350°.
Step #5 To prepare cake, lightly coat an 8-inch springform pan with cooking spray; set aside.
Step #6 Lightly spoon 1 1/4 c flour into dry measuring c; level with a knife.
Step #7 Combine flour, baking soda, baking powder, & salt in a small bowl; set aside.
Step #8 Combine powdered sugar & 1/4 c butter In a large-ish bowl; beat with a mixer at medium speed until well mixed (about 2 mins).
Step #9 Add vanilla & egg; beat 2 mins.
Step #10 Combine milk & juice; add to sugar mixture, & beat 2 mins.
Step #11 Add half of flour mixture to sugar mixture; stir until smooth.
Step #12 Add remaining flour mixture, & stir just until mixd.
Step #13 Spoon half of batter into prepared pan, spreading evenly.
Step #14 Top with strawberry spread.
Step #15 Spoon remaining batter over strawberry layer, spreading evenly.
Step #16 Sprinkle top reserved crumb topping evenly over batter.
Step #17 Bake at 350° for 45 mins or until a wooden pick inserted in center comes out clean.
Step #18 Cool 10 mins in pan on a wire rack; remove this from pan.
Step #19 Cool completely on wire rack.
