Hash Brown Breakfast Casserole Recipe

Ingredients
  • 1/4 tsp salt
  • 2 1/2 c frozen cubed hash browns
  • 1/4 c sliced onion
  •  Toppings: picante sauce or green hot sauce, sour cream
  • 5 large eggs, lightly beaten
  • 1 c all-purpose baking mix
  • 2 c (8 oz) shredded sharp Cheddar cheese
  • 1/4 tsp pepper
  • 1 lb ground hot pork sausage
  • 1 3/4 c milk
  •  Garnish: fresh parsley sprigs

Directions
  • Step #1 Cook sausage & onion In a large-ish skillet over medium-high heat 5 mins or until meat crumbles.
  • Step #2 Stir in hash browns, & cook 5 to 7 mins or until sausage is no longer pink & potatoes are lightly browned.
  • Step #3 Drain mixture on paper towels; spoon into a greased 13- x 9-inch baking dish.
  • Step #4 Stir together eggs, cheese, & next 4 ingredients; pour evenly over sausage mixture, stirring well.
  • Step #5 Cover up & chill 8 hrs.
  • Step #6 Bake, covered with nonstick foil wrap, at 350° for 45 mins.
  • Step #7 Uncover & bake 10 to 15 more mins or until a wooden pick inserted in the center comes out clean.
  • Step #8 Remove from oven, & let this stand 5 mins.
  • Step #9 Serve with desired toppings.
  • Step #10 Garnish, if desired.
