Cranberry-sweet Potato Quick Bread Recipe

Ingredients
  • 1 1/2 tsps baking powder
  • 2 tbsps sliced almonds
  • 1/4 tsp ground nutmeg
  • 2 1/2 c all-purpose flour
  • 1/2 tsp baking soda
  •  Cooking spray
  • 1/4 tsp ground cinnamon
  • 3/4 c egg substitute
  • 3/4 c no-sugar-added canned mashed sweet potato
  • 1/4 c margarine, melted
  • 1/3 c orange juice
  • 1 c sliced cranberries
  • 1 c firmly packed brown sugar
  • 1/2 tsp salt

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Combine first 7 ingredients In a large-ish bowl; make a well in center of mixture.
  • Step #3 Combine sweet potato, orange juice, egg substitute, & margarine in a bowl; add to dry ingredients.
  • Step #4 Stir just until moist.
  • Step #5 Fold in cranberries.
  • Step #6 Spoon batter into a 9 x 5-inch loaf pan coated with cooking spray; sprinkle almonds over batter.
  • Step #7 Bake at 350° for 1 hr & 10 mins or until a wooden pick inserted in center comes out clean.
  • Step #8 Let cool in pan 10 mins on a wire rack; remove this from pan.
  • Step #9 Let cool completely on wire rack.
