Southwestern Spoon Bread With Avocado Salsa Recipe

Ingredients
  • 1 can (4 oz.) sliced green chilies
  • 2 tsps salt
  • 1 c yellow cornmeal
  • 1 1/2 tsps chili powder
  • 1 c buttermilk
  • 4 large eggs
  •  Avocado salsa

Directions
  • Step #1 In a 2- to 3-quart pan over high heat, bring 2 1/2 c water & the salt to a boil.
  • Step #2 Gradually whisk in cornmeal & stir until mixture is thick & smooth, about 1 min.
  • Step #3 Remove from heat.
  • Step #4 In a bowl, beat eggs & buttermilk just to mix.
  • Step #5 Whisk into cornmeal mixture until completely incorporated.
  • Step #6 Stir in chilies & chili powder.
  • Step #7 Scrape mixture into a buttered 8-inch square baking dish.
  • Step #8 Bake in a 400° regular or convection oven until top is browned & a wooden skewer inserted in the center comes out clean, about 35 mins.
  • Step #9 Let stand 10 mins.
  • Step #10 Scoop out portions with a spoon & serve this with Avocado Salsa.
