Sweet Potato And Canadian Bacon Hash Recipe

Ingredients
  • 1 tbsp cider vinegar
  • 2 c (3/4-inch) sliced red potato (about 8 oz)
  • 1/4 c fat-free, less-sodium chicken broth
  • 2 tbsps vegetable oil
  • 3/4 tsp salt
  • 1 c sliced Canadian bacon (about 8 oz)
  • 1/2 tsp freshly ground black pepper
  • 1/8 tsp grated whole nutmeg
  • 1 c sliced green bell pepper
  • 1/2 tsp celery seed
  • 4 c (3/4-inch) sliced peeled sweet potato (about 1 lb)
  • 2/3 c sliced green onions

Directions
  • Step #1 Place potatoes in a saucepan, & cover with water.
  • Step #2 Bring to a boil.
  • Step #3 Reduce heat, & let simmer 5 mins.
  • Step #4 Drain.
  • Step #5 Heat oil In a large-ish nonstick skillet over med-heat/flame.
  • Step #6 Add bacon; cook 4 mins, stirring frequently.
  • Step #7 Add bell pepper & green onions; cook 2 mins, stirring frequently.
  • Step #8 Add potatoes, pepper, & nutmeg; cook 4 mins, celery seed, salt, carefully stirring every once in awhile.
  • Step #9 Stir in broth & vinegar.
  • Step #10 Toss carefully until liquid is absorbed.
