Cheesy Sweet Potato Hash Browns Recipe

Ingredients
  • 1 medium-size sweet potato, peeled & shredded
  • 4 oz thinly sliced Jarlsberg or Monterey Jack cheese
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 medium baking potato, peeled & shredded
  • 3 tbsps vegetable oil, divided
  • 2 tsps butter or margarine

Directions
  • Step #1 Melt butter & 1 tbsp oil in a nonstick skillet over med-heat/flame.
  • Step #2 Combine potatoes, salt, & pepper.
  • Step #3 Heat 1 tbsp vegetable oil in a nonstick skillet over medium-high heat.
  • Step #4 Drop potato mixture into 3 1/2 inch rounds; cook, in batches, 5 mins on each side or until golden, adding remaining oil as necessary.
  • Step #5 Press down with a spatula to flatten; top hash browns evenly with Jarlsberg or Monterey Jack cheese during the last 5 mins.
