Pan-seared Oatmeal With Warm Fruit Compote And Cider Syrup Recipe

Ingredients
  • 1 (7-oz) package dried mixed fruit bits
  • 1/2 tsp ground cinnamon
  • 3 c water
  • 1/4 c butter, divided
  • 1 c fat-free milk
  • 2 c apple cider
  • 1 1/2 c steel-cut (Irish) oats
  • 2 c water
  • 1/4 c packed brown sugar
  •  Syrup:
  • 1/4 tsp salt
  •  Compote:
  • 1/2 tsp ground cinnamon
  •  Cooking spray
  • 1/4 c packed brown sugar
  •  Oatmeal:

Directions
  • Step #1 To prepare syrup, bring cider to a boil in a small saucepan over medium-high heat.
  • Step #2 Cook until reduced to 1/3 c (about 20 mins); set aside.
  • Step #3 To prepare compote, 1/2 tsp cinnamon, mix 2 c water, 1/4 c sugar, & dried fruit in a medium saucepan; bring to a boil.
  • Step #4 Reduce heat, & let simmer 20 mins or until thick.
  • Step #5 To prepare oatmeal, 1 c milk, 1/2 tsp cinnamon, 1/4 c brown sugar, mix 3 c water, & salt In a large-ish saucepan.
  • Step #6 Bring to a boil over medium-high heat; stir in the oats.
  • Step #7 Reduce heat, & let simmer 20 mins or until thick, stirring every once in awhile.
  • Step #8 Spoon oatmeal into an 11 x 7-inch baking dish coated with cooking spray; cool to about room temp.
  • Step #9 Cover up & chill at least 1 hr or until set.
  • Step #10 Using a sharp knife, cut oatmeal into 8 equal rectangles; cut each rectangle in half diagonally to form 16 triangles.
  • Step #11 Melt 2 tbsps butter In a large-ish nonstick skillet over med-heat/flame.
  • Step #12 Add 8 oatmeal triangles; cook 3 mins on each side or until golden brown.
  • Step #13 Remove from pan; keep warm.
  • Step #14 Repeat procedure with remaining 2 tbsps butter & oatmeal triangles.
  • Step #15 Place 2 oatmeal triangles on each of 8 plates, & top each serving with 3 1/2 tbsps fruit compote & about 2 tsps syrup.
