Tortilla Scramble With Salsa Recipe

Ingredients
  •  Salt & freshly ground pepper
  •  Fourth-of-July Firecracker Salsa
  • 1 c broken tortilla chips (about 2 inches)
  • 2 tbsps unsalted butter
  •  or
  •  Grilled Tomatillo & Purple Basil Salsa
  • 10 large eggs
  • 1/2 c Fontina cheese, cut into 1/2-inch dice (2 1/2 oz)
  • 2 tbsps heavy cream

Directions
  • Step #1 Preheat the oven to 400°.
  • Step #2 Spread the tortilla chips on a baking sheet & toast in the oven for 4 mins, or until nicely browned.
  • Step #3 Let cool.
  • Step #4 In a large bowl, lightly beat the eggs.
  • Step #5 Add the cream to the bowl.
  • Step #6 Spice up with salt & pepper & beat again.
  • Step #7 Melt the butter in a medium nonstick skillet.
  • Step #8 When the foam subsides, add the eggs & cook over moderately low heat, using a spatula to lift the cooked edges & tilting the skillet so the uncooked eggs seep underneath.
  • Step #9 When the eggs are almost set, add the tortilla chips & stir a few times.
  • Step #10 Add the cheese & stir once or twice, then remove the skillet from the heat.
  • Step #11 Serve the eggs at once, with the salsa on the side.
