Orange-date Muffins Recipe

Ingredients
  • 1/4 c grated orange rind
  • 3 c all-purpose flour
  • 1 tbsp butter or margarine, melted
  • 2 tbsps fresh orange juice
  • 2 large eggs
  • 2 c firmly packed light brown sugar
  • 1 c buttermilk
  • 1 c sliced pecans
  • 1 c sliced dates
  • 1 c butter or margarine, softened
  • 2 tsps baking soda
  • 1/3 c powdered sugar
  • 1 tsp vanilla extract

Directions
  • Step #1 Stir together buttermilk & soda until mixed.
  • Step #2 Beat 1 c butter at medium speed with an electric mixer until creamy; slowly add brown sugar, beating well.
  • Step #3 Stir in buttermilk mixture, eggs, & next 5 ingredients until mixed.
  • Step #4 Spoon batter into greased muffin pans filling two-thirds full.
  • Step #5 Bake at 350° for 20 to 23 mins.
  • Step #6 Remove from pans as soon as possible, & cool on wire racks.
  • Step #7 Stir together powdered sugar, orange juice, & melted butter until smooth; drizzle glaze evenly over muffins.
  • Step #8 Note: Batter may be covered tightly & stored in the refrigerator up to 24 hrs.
