Potato, Mushroom, And Pesto Omelet Recipe

Ingredients
  • 1 c thinly sliced mushrooms
  • 1/2 c sliced peeled baking potato, cooked
  • 1/8 tsp salt
  • 1/8 tsp black pepper
  • 1/4 c finely sliced red bell pepper
  • 4 large egg whites
  • 1 large egg
  • 1 tbsp Classic Pesto
  •  Cooking spray

Directions
  • Step #1 Combine first 4 ingredients in a medium bowl, stirring with a whisk.
  • Step #2 Heat a small nonstick skillet coated with cooking spray over medium-high heat.
  • Step #3 Add mushrooms & bell pepper; sauté 5 mins.
  • Step #4 Pour egg mixture into pan; top this with potato (do not stir).
  • Step #5 Cover up, reduce heat to medium-low, & cook 8 mins or until center is set.
  • Step #6 Spread Classic Pesto over omelet.
  • Step #7 Loosen omelet with a spatula, & cut in half.
  • Step #8 Slide omelet halves onto plates.
