Country Ham Sauce Recipe

Ingredients
  • 3 tbsps butter or margarine
  • 1 tsp freshly ground pepper
  • 1 1/2 c whipping cream
  • 1/2 c freshly grated Parmesan cheese
  • 1/8 tsp ground nutmeg
  • 3 tbsps all-purpose flour
  • 1 c sliced country ham
  • 2 c chicken broth
  • 1 (10-oz) package frozen sliced spinach, thawed

Directions
  • Step #1 Drain spinach well, pressing between paper towels; set aside.
  • Step #2 Melt butter in a heavy saucepan over low heat/flame; add flour, stirring until smooth.
  • Step #3 Cook, stirring constantly, 2 to 3 mins or until lightly browned.
  • Step #4 Whisk in broth & whipping cream slowly; cook over med-heat/flame, whisking constantly, until mixture begins to boil.
  • Step #5 Reduce heat, & let simmer 10 to 15 mins or until slightly thickened.
  • Step #6 Stir in spinach, ham, & remaining ingredients; cook this until thoroughly heated.
