Lemon Poppy Seed Muffins Recipe

Ingredients
  • 1/3 c lemon juice
  • 2 tbsps grated lemon peel
  •  Lemon glaze (recipe follows)
  • 1/3 c poppy seeds
  • 2 large eggs
  • 1 c sugar
  • 3 c all-purpose flour
  • 1/2 c butter or margarine, melted
  • 1 tbsp baking soda
  • 2/3 c milk
  • 1/2 tsp salt

Directions
  • Step #1 In a bowl, baking soda, mix flour, poppy seeds, & salt.
  • Step #2 In another bowl, beat butter & sugar until well mixed.
  • Step #3 Add eggs & beat until incorporated.
  • Step #4 Beat in lemon peel & lemon juice.
  • Step #5 Add half the flour mixture & stir just until evenly moistened, then stir in the milk & remaining flour mixture.
  • Step #6 Spoon batter equally into 12 paper-lined muffin c.
  • Step #7 Bake in a 350° regular or convection oven until tops are browned & a wooden skewer inserted in the center comes out clean, 15 to 18 mins.
  • Step #8 Let stand on a rack 5 mins, then remove muffins & let cool completely.
  • Step #9 Dip top of each muffin in lemon glaze; allow excess to drip off.
  • Step #10 Return to rack until glaze is set, about 15 mins.
  • Step #11 Lemon glaze: In a bowl, mix 1/2 c powdered sugar, 2 tbsps lemon juice, & 1/2 tsp vanilla until smooth.
  • Step #12 Use as soon as possible.
  • Step #13 Nutritional analysis per muffin.
