Cranberry Rolls Recipe

Ingredients
  • 3/4 c warm water (105° to 115°)
  • 12 large marshmallows
  • 1 tsp ground cinnamon
  • 1 c sugar, divided
  • 1/4 tsp ground ginger
  • 1 c sweetened dried cranberries
  • 1 c powdered sugar
  • 1 tbsp milk
  • 1 tsp salt
  • 2 large eggs
  • 2 (1/4-oz) envelopes rapid-rise yeast
  • 1/2 c butter or margarine, melted
  • 3 c all-purpose flour
  • 6 tbsps vegetable oil

Directions
  • Step #1 Combine yeast & 3/4 c water in a glass measuring c; let this stand 5 mins.
  • Step #2 Beat yeast mixture, 1/4 c sugar, & next 4 ingredients at lowish speed with an electric mixer until mixed.
  • Step #3 Turn dough out onto a well-floured surface, & knead until smooth & elastic (about 4 mins).
  • Step #4 Cover up & let rise in a warm place (85°), free from drafts, 45 mins or until doubled in bulk.
  • Step #5 Punch dough down, & divide into 12 portions.
  • Step #6 Roll each into a 3-inch circle.
  • Step #7 Brush circles lightly with butter, reserving remaining butter.
  • Step #8 Combine remaining 3/4 c sugar & cinnamon; sprinkle evenly over circles.
  • Step #9 Place cranberries evenly in center of each circle, & top this with a marshmallow.
  • Step #10 Pull edges of circle to center, & pinch to seal; shape into a ball.
  • Step #11 Place, seam side down, in lightly greased muffin pans.
  • Step #12 Brush tops with reserved butter.
  • Step #13 Cover up & chill 8 hrs.
  • Step #14 Remove from refrigerator, & let rise in a warm place, free from drafts, 30 mins or until doubled in bulk.
  • Step #15 Bake at 400° for 12 mins or until lightly browned; cool slightly.
  • Step #16 Stir together powdered sugar, milk, & ginger; drizzle over rolls.
  • Step #17 Prep: 40 min.
  • Step #18 ; Rise: 1 hr.
  • Step #19 , 15 min.
  • Step #20 ; Chill: 8 hrs.
