Brie-and-veggie Breakfast Strata Recipe

Ingredients
  • 1 tsp pepper
  • 1 c (4 oz.) shredded Parmesan cheese
  • 1 large sweet onion, halved & thinly sliced
  • 1 large red bell pepper, sliced
  • 3 c milk
  • 1 large Yukon gold potato, peeled & sliced
  • 1 tsp seasoned salt
  • 8 large eggs
  • 2 tbsps Dijon mustard
  • 1 (8-oz.) Brie round*
  • 2 tbsps olive oil
  • 1 (12-oz.) package sourdough bread loaf, cubed

Directions
  • Step #1 Sauté first 3 ingredients in hot oil 10 to 12 mins or just until vegetables are tender & onion slices begin to turn golden.
  • Step #2 Trim & discard rind from Brie.
  • Step #3 Cut cheese into 1/2-inch cubes.
  • Step #4 Layer a lightly greased 13- x 9-inch baking dish with half each of bread cubes, onion mixture, Brie cubes, & Parmesan cheese.
  • Step #5 Whisk together eggs & next 4 ingredients; pour half of egg mixture evenly over cheeses.
  • Step #6 Repeat layers once.
  • Step #7 Cover up & chill at least 8 hrs or up to 24 hrs.
  • Step #8 Bake at 350° for 45 to 50 mins or until lightly browned on top & set in center.
  • Step #9 *2 c (8 oz.
  • Step #10 ) shredded Swiss cheese may be substituted.
