Herbed Turkey Sausage Patties Recipe

Ingredients
  • 1 small onion, finely sliced
  • 1 tbsp low-fat (1%) milk
  • 1/4 lb fresh shiitake mushrooms, stems discarded & caps finely sliced
  • 2 tsps vegetable oil
  • 1 tbsp finely sliced fresh flat-leaf parsley
  • 1 large red potato
  • 1 lb ground turkey breast or 1 lb skinless turkey breast, cut into 1-inch cubes
  • 2 oz cured ham, such as prosciutto, trimmed of visible fat & finely sliced
  • 1 tsp salt
  • 1/2 tsp finely sliced fresh thyme or pinch of dried
  • 2 garlic cloves, minced
  • 1/4 tsp freshly ground black pepper
  • 1 tsp finely sliced fresh sage

Directions
  • Step #1 In a steamer basket set over simmering water, steam the potato until tender when pierced with a fork, about 18 mins.
  • Step #2 Let cool slightly, then peel the potato & coarsely grate it.
  • Step #3 Heat 1 tsp of the vegetable oil In a large-ish nonstick skillet.
  • Step #4 Add the mushrooms & cook over high heat, stirring every once in awhile, until beginning to brown, about 4 mins.
  • Step #5 Add the onion & garlic & cook, stirring, until translucent, about 3 mins.
  • Step #6 Transfer to a bowl & let cool.
  • Step #7 If using cubed turkey breast, pulse in a food processor/blender until coarsely ground or mince by hand.
  • Step #8 Add the ground turkey to the mushroom mixture with the potato, thyme, sage, ham, parsley, salt, milk, & pepper & mix well.
  • Step #9 Shape the mixture into eight 3-inch patties.
  • Step #10 Heat the remaining 1 tsp vegetable oil in the large nonstick skillet.
  • Step #11 Add the patties & cook over moderately high heat, until well browned & cooked through, turning once, about 3 mins per side.
  • Step #12 Transfer to plates & serve.
  • Step #13 Make Ahead: The patties can be put in the fridged, covered, for up to 2 days.
