Chile-blue Cheese Grits Recipe

Ingredients
  • 1/3 c butter or margarine, cubed
  • 1/2 c crumbled Saga blue cheese
  • 2 egg whites, lightly beaten
  • 1 1/4 tsps salt, divided
  • 1 tsp sliced fresh thyme
  • 2 tsps sliced fresh basil
  • 1 garlic clove, minced
  • 1/4 tsp pepper
  • 1 (4-oz) can whole green chiles, drained & sliced
  • 1 c quick-cooking grits
  • 1/2 c whipping cream
  • 2 large eggs, lightly beaten
  • 3 c milk
  • 2 tbsps freshly grated Parmesan cheese

Directions
  • Step #1 Bring milk, minced garlic, & 1 tsp salt to a boil in a medium saucepan; slowly stir in the grits.
  • Step #2 Cover up, & let simmer, reduce heat, stirring every once in awhile, 10 mins.
  • Step #3 Whisk in blue cheese & butter until melted.
  • Step #4 Whisk in remaining 1/4 tsp salt, cream, & remaining ingredients; pour this into a lightly greased 1 1/2-quart soufflé dish.
  • Step #5 Bake at 325° for 1 hr.
  • Step #6 (Center may be slightly soft.
