Ingredients
10 large eggs
8 oz Feta, crumbled
1 pint grape tomatoes, halved
4 scallions (white & green parts), thinly sliced
2 tsps kosher salt
1 5-oz bag baby spinach
1/2 tsp black pepper
3 tbsps olive oil
Directions
Step #1 Heat toaster oven to 350° F.
Step #2 Add the oil to a 2-quart casserole & transfer to oven for 5 mins.
Step #3 Meanwhile, in a bowl, salt, whisk together the eggs, & pepper.
Step #4 Add the spinach, tomatoes, & scallions & mix.
Step #5 Gently stir in the the Feta.
Step #6 Remove casserole from oven.
Step #7 Pour the egg mixture into casserole.
Step #8 Bake until the frittata is browned around the edges & slightly puffed & a knife comes out clean, 25 to 30 mins.
