Greek Frittata Recipe

Ingredients
  • 10 large eggs
  • 8 oz Feta, crumbled
  • 1 pint grape tomatoes, halved
  • 4 scallions (white & green parts), thinly sliced
  • 2 tsps kosher salt
  • 1 5-oz bag baby spinach
  • 1/2 tsp black pepper
  • 3 tbsps olive oil

Directions
  • Step #1 Heat toaster oven to 350° F.
  • Step #2 Add the oil to a 2-quart casserole & transfer to oven for 5 mins.
  • Step #3 Meanwhile, in a bowl, salt, whisk together the eggs, & pepper.
  • Step #4 Add the spinach, tomatoes, & scallions & mix.
  • Step #5 Gently stir in the the Feta.
  • Step #6 Remove casserole from oven.
  • Step #7 Pour the egg mixture into casserole.
  • Step #8 Bake until the frittata is browned around the edges & slightly puffed & a knife comes out clean, 25 to 30 mins.
