Tabbouleh Scramble Recipe

Ingredients
  • 2 tbsps sliced drained oil-packed dried tomatoes (reserve 1 tsp oil)
  • 2 to 4 tbsps crumbled feta cheese
  •  Salt & pepper
  • 3/4 c prepared tabbouleh (see note above)
  • 8 large eggs

Directions
  • Step #1 In a bowl, beat eggs lightly to mix.
  • Step #2 Set a 10- to 12-inch frying pan over medium-high heat.
  • Step #3 When hot, add tomatoes & the reserved oil, then add eggs & tabbouleh.
  • Step #4 Cook, stirring constantly, until eggs are as done as you like them.
  • Step #5 Add salt & pepper to taste.
  • Step #6 Spoon onto plates & sprinkle with feta cheese.
