Ingredients
2 tbsps sliced drained oil-packed dried tomatoes (reserve 1 tsp oil)
2 to 4 tbsps crumbled feta cheese
Salt & pepper
3/4 c prepared tabbouleh (see note above)
8 large eggs
Directions
Step #1 In a bowl, beat eggs lightly to mix.
Step #2 Set a 10- to 12-inch frying pan over medium-high heat.
Step #3 When hot, add tomatoes & the reserved oil, then add eggs & tabbouleh.
Step #4 Cook, stirring constantly, until eggs are as done as you like them.
Step #5 Add salt & pepper to taste.
Step #6 Spoon onto plates & sprinkle with feta cheese.
