Banana Waffles With Pecans Recipe

Ingredients
  • 1 1/2 sticks (6 oz) unsalted butter, melted
  • 2 large ripe bananas, quartered lengthwise & cut into 1/2-inch pieces
  • 1/2 c pecans
  • 1/4 c sugar
  • 1 1/2 c all-purpose flour
  • 1 1/4 c milk
  • 1 tbsp baking powder
  • 3 large eggs, separated
  •  Maple syrup, for serving
  • 1/4 tsp salt
  • 1/2 c yellow cornmeal

Directions
  • Step #1 Preheat the oven to 350°.
  • Step #2 Spread the pecans in a pie plate & bake for 10 mins, or until golden.
  • Step #3 Let cool, then coarsely chop.
  • Step #4 Lower the oven temperature to 225°.
  • Step #5 Preheat a waffle iron.
  • Step #6 In a large bowl, whisk the flour with the cornmeal, baking powder & salt.
  • Step #7 In a small bowl, mix the milk, melted butter & egg yolks.
  • Step #8 Stir the liquid into the dry ingredients just until moistened; lumps are okay.
  • Step #9 Fold the bananas into the batter.
  • Step #10 In a clean bowl, beat the egg whites at medium speed until frothy.
  • Step #11 Increase the speed to high & beat until firm peaks form.
  • Step #12 Add the sugar & beat until the whites are stiff & glossy.
  • Step #13 Fold the whites into the batter until no streaks remain.
  • Step #14 Oil or butter the waffle iron.
  • Step #15 Pour 1 1/4 c of batter into the iron & bake this until the waffle is golden, about 6 mins, depending on the iron.
  • Step #16 Transfer the waffle to an oven rack to keep warm.
  • Step #17 Continue to cook the remaining batter in 3 batches.
  • Step #18 (There should be no need to regrease the iron between waffles.
  • Step #19 ) Separate the waffles & serve this with the toasted pecans & maple syrup.
