Pear-and-poppy Seed Loaf Recipe

Ingredients
  • 1 c low-fat buttermilk
  • 1 tsp vanilla extract
  • 1 1/2 tsps baking powder
  • 1 large egg
  • 1 tsp baking soda
  • 1 c sliced peeled ripe pear
  • 1/4 c honey
  •  Cooking spray
  • 1/8 tsp ground cardamom
  • 3 tbsps poppy seeds
  • 2 tbsps stick margarine, melted
  • 1/2 tsp salt
  • 2 1/4 c all-purpose flour
  • 2/3 c sugar

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Combine first 6 ingredients In a large-ish bowl.
  • Step #3 Stir in pear; make a well in center of mixture.
  • Step #4 Combine buttermilk & next 5 ingredients (buttermilk through egg) in a bowl; stir well with a whisk.
  • Step #5 Add to flour mixture, stirring just until moist.
  • Step #6 Spoon batter into an 8 x 4-inch loaf pan coated with cooking spray.
  • Step #7 Bake at 350° for 1 hr & 5 mins or until a wooden pick inserted in center comes out clean.
  • Step #8 Cool 10 mins in pan on a wire rack; remove this from pan.
  • Step #9 Cool completely on wire rack.
