Peanut Butter-and-honey Muffins Recipe

Ingredients
  • 1 c whole-wheat flour
  • 1 large egg, lightly beaten
  • 3/4 tsp salt
  • 1 tbsp granulated sugar
  • 1/2 c creamy peanut butter
  • 1/4 c packed brown sugar
  • 1 1/4 c all-purpose flour
  • 2/3 c honey
  • 1 1/2 c fat-free milk
  • 2 large egg whites, lightly beaten
  •  Cooking spray
  • 1 tbsp baking powder

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Lightly spoon flours into dry measuring c; level with a knife.
  • Step #3 Combine flours, baking powder, & salt in a bowl; make a well in center of mixture.
  • Step #4 Combine brown sugar, honey, & peanut butter in a bowl; stir well with a whisk.
  • Step #5 Add milk, egg whites, & egg to honey mixture; stir well.
  • Step #6 Add honey mixture to flour mixture; stir just until moist.
  • Step #7 Spoon batter into 16 muffin c coated with cooking spray.
  • Step #8 Sprinkle top granulated sugar evenly over tops.
  • Step #9 Bake at 400° for 18 mins or until muffins spring back when touched lightly in center.
  • Step #10 Remove muffins from pans as soon as possible; place on a wire rack.
