Savory Breakfast Casserole Recipe

Ingredients
  • 4 large eggs
  • 8 large egg whites
  • 1 c (4 oz) shredded reduced-fat cheddar cheese, divided
  • 4 c (1/2-inch) cubed white bread (about 4 1/2 oz)
  • 2 c 2% reduced-fat milk
  • 1/2 c sliced green onions
  •  Cooking spray
  • 14 oz meatless fat-free sausage, crumbled (such as Gimme Lean!)
  • 1/4 tsp freshly ground black pepper
  • 1/4 tsp salt
  • 1/2 tsp dry mustard

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Combine the milk, & next 5 ingredients (green onions through eggs), green onions, 1/2 c cheddar cheese, stirring with a whisk.
  • Step #3 Divide sausage & bread evenly between 2 (8 x 4-inch) loaf pans coated with cooking spray.
  • Step #4 Pour egg mixture evenly between pans.
  • Step #5 Top each pan with 1/4 c cheese.
  • Step #6 Cover up each pan with foil wrap.
  • Step #7 Bake at 350° for 20 mins.
  • Step #8 Uncover & bake an extra 40 mins or until a wooden pick inserted in center comes out clean.
  • Step #9 To freeze unbaked casserole: Prepare through Step Cover up with plastic wrap, pressing to remove as much air as possible.
  • Step #10 Wrap with heavy-duty foil wrap.
  • Step #11 Store in freezer for up to 2 months.
  • Step #12 To prepare frozen unbaked casserole: Thaw completely in refrigerator (about 24 hrs).
  • Step #13 Preheat oven to 350º.
  • Step #14 Remove foil wrap; reserve foil wrap.
  • Step #15 Remove plastic wrap; discard wrap.
  • Step #16 Cover up casserole with reserved foil wrap; bake this at 350º for 40 mins.
  • Step #17 Uncover & bake an extra 50 mins or until bubbly.
