Step #1 Preheat oven to 350°.
Step #2 Beat sugars, cream cheese, & butter with a mixer at medium speed until well-mixed (about 5 mins).
Step #3 Add the egg whites, 1 at a time, beating well after each addition.
Step #4 Beat in vanilla & rind.
Step #5 Lightly spoon flour into dry measuring c; level with a knife.
Step #6 Combine flour, baking soda, baking powder, & salt; stir well with a whisk.
Step #7 Add flour mixture to sugar mixture alternately with buttermilk, beginning & ending with flour mixture.
Step #8 Stir in mango & pineapple.
Step #9 Pour batter into a 13 x 9-inch baking pan coated with cooking spray.
Step #10 Sprinkle top coconut over batter.
Step #11 Bake at 350° for 50 mins or until a wooden pick inserted in center comes out clean.
Step #12 Cool completely on a wire rack.
