Tropical Fruit Coffeecake Recipe

Ingredients
  • 1 c sliced peeled mango
  • 1 1/2 c low-fat buttermilk
  •  Cooking spray
  • 2 large egg whites
  • 1 1/2 tsps vanilla extract
  • 2 tsps grated lemon rind
  • 1/3 c flaked sweetened coconut
  • 1 c canned crushed pineapple in juice, drained
  • 3/4 tsp salt
  • 1 1/2 tsps baking powder
  • 1/4 c butter or stick margarine, softened
  • 1/2 c (4 oz) fat-free cream cheese, softened
  • 3/4 c granulated sugar
  • 2/3 c packed brown sugar
  • 3/4 tsp baking soda
  • 2 3/4 c all-purpose flour

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Beat sugars, cream cheese, & butter with a mixer at medium speed until well-mixed (about 5 mins).
  • Step #3 Add the egg whites, 1 at a time, beating well after each addition.
  • Step #4 Beat in vanilla & rind.
  • Step #5 Lightly spoon flour into dry measuring c; level with a knife.
  • Step #6 Combine flour, baking soda, baking powder, & salt; stir well with a whisk.
  • Step #7 Add flour mixture to sugar mixture alternately with buttermilk, beginning & ending with flour mixture.
  • Step #8 Stir in mango & pineapple.
  • Step #9 Pour batter into a 13 x 9-inch baking pan coated with cooking spray.
  • Step #10 Sprinkle top coconut over batter.
  • Step #11 Bake at 350° for 50 mins or until a wooden pick inserted in center comes out clean.
  • Step #12 Cool completely on a wire rack.
