Date Nut Pinwheel Cookies Recipe

Ingredients
  • 1 1/2 tsps vanilla extract
  • 1 tsp lemon zest
  • 3/4 tsp salt
  • 1 c packed brown sugar
  • 3 1/2 c all-purpose flour
  • 2 eggs
  • 1/2 c white sugar
  • 1 1/4 c water
  • 2/3 c finely sliced walnuts
  • 1 1/2 tsps baking powder
  • 4 tsps lemon juice
  • 3/4 c butter
  • 1/4 c white sugar
  • 1 pinch salt
  • 1 1/2 c pitted dates
  • 1/4 tsp baking soda

Directions
  • Step #1 Chop pitted dates in food chopper.
  • Step #2 Place dates into small saucepan & add 1/4 c sugar, dash of salt, & 1 1/4 c of water.
  • Step #3 Cook, stirring constantly until mixture is of a soft consistency.
  • Step #4 Remove from heat.
  • Step #5 Add grated lemon rind, lemon juice, & sliced nuts.
  • Step #6 Mix well & chill.
  • Step #7 Cream together 3/4 c butter & slowly add 1/2 c white sugar & 1c lightly packed brown sugar.
  • Step #8 Beat well.
  • Step #9 Beat 2 eggs until thick & add to creamed mixture part at a time, beating well after each addition.
  • Step #10 Stir in 1 1/2 tsps vanilla.
  • Step #11 Measure into a sifter 3 1/2 c flour, 1 1/2 tsps baking powder, 1/4 tsp baking soda, & 3/4 tsp of salt.
  • Step #12 Sift together twice.
  • Step #13 Sift dry ingredients into creamed mixture about 1/4 at a time.
  • Step #14 Combine thoroughly after each addition.
  • Step #15 Chill until firm.
  • Step #16 Divide dough into 3 parts.
  • Step #17 Roll out 1 part at a time into a rectangle.
  • Step #18 Spread with date filling.
  • Step #19 Roll up jelly roll fashion in waxed paper.
  • Step #20 Chill several hrs.
  • Step #21 Preheat oven to 350 degrees F (180 degrees C).
  • Step #22 With sharp knife, slice 1/4 inch thick slices off of rolls & place on greased cookie sheets.
  • Step #23 Bake 10 - 13 mins.
  • Step #24 Let cool.
