Crêpes Con Queso Recipe

Ingredients
  •  Vegetable Cooking Spray
  • 1 c all-purpose flour
  •  Garnish: fresh cilantro sprig
  • 1 tbsp chili powder
  • 1/2 c yellow cornmeal
  • 1 c (4 oz) shredded Cheddar cheese
  •  Crêpe Filling
  • 3 large eggs
  • 1 c chicken broth
  • 1 tsp salt

Directions
  • Step #1 Position knife blade in food processor/blender bowl; add flour & next 5 ingredients.
  • Step #2 Process until smooth.
  • Step #3 Cover up batter, & put in the fridge at least 2 hrs.
  • Step #4 Coat an 8-inch nonstick skillet with cooking spray; place over med-heat/flame until hot.
  • Step #5 Pour 1/3 c batter into pan; quickly tilt pan in all directions so batter covers bottom of pan.
  • Step #6 Cook 1 min or until crêpe can be shaken loose from pan.
  • Step #7 Turn crêpe over, & cook about 30 seconds.
  • Step #8 Place crépe on a towel to cool.
  • Step #9 Repeat procedure with remaining batter.
  • Step #10 Spoon about 1/2 c Crêpe Filling on half of each crêpe; roll up, & place seam side down, in a lightly greased 13- x 9- x 2-inch baking dish.
  • Step #11 Sprinkle top crêpes evenly with Cheddar cheese.
  • Step #12 Bake at 300° for 5 mins or until cheese melts.
  • Step #13 Garnish, if desired.
