Sumptuous Egg Salad Sandwiches Recipe

Ingredients

2 tbsps extra-virgin olive oil
2 tbsps balsamic vinegar
1 1/2 tbsps Dijon mustard
1/2 tsp minced fresh thyme leaves or dried thyme
Melted Cucumbers
About 1/2 c mayonnaise (regular or reduced fat) or sour cream (or equal portions of each)
8 hard-cooked large eggs, shelled & mashed (see notes)
8 slices dense-textured pumpernickel bread or toasted firm-textured white bread or 4 English muffins, split & toasted
6 c baby salad mix, rinsed & crisped
Salt & pepper
Pickled Onion Salad
1 1/2 tsps minced fresh tarragon or 1/2 tsp dried tarragon (see notes)

Directions

Step #1 In a bowl, mix eggs with enough mayonnaise for desired consistency.
Step #2 Stir in mustard, tarragon, & thyme.
Step #3 Add salt & pepper to taste.
Step #4 Put salad mix in another bowl; mix with olive oil & vinegar, & salt & pepper to taste.
Step #5 Place two slices of bread on each plate.
Step #6 Spread egg salad equally on slices.
Step #7 Top equally with Pickled Onion Salad & Melted Cucumbers.
Step #8 Mound salad mix alongside.
