Blue Corn Waffles With Lavender Cream And Fresh Blueberries Recipe

Ingredients
  • 2 1/2 tsps baking powder
  • 3 tbsps sugar
  • 1/4 tsp salt
  • 3/4 c blue or yellow cornmeal
  • 3 tbsps melted butter
  • 1 c buttermilk
  • 2 large eggs
  • 3/4 c all-purpose flour
  •  Blueberries

Directions
  • Step #1 In a large bowl, whisk together the cornmeal, salt, baking powder, flour, & sugar.
  • Step #2 Whisk in the eggs & buttermilk until well mixed, then stir in the the butter.
  • Step #3 Cook in a waffle iron according to manufacturer's directions.
  • Step #4 Serve hot with lavender cream (recipe follows) & fresh blueberries.
  • Step #5 Lavender cream.
  • Step #6 Cook 1/4 c heavy whipping cream & a scant 1/4 tsp dried culinary lavender in a small saucepan over med-heat/flame until hot but not boiling.
  • Step #7 Cool completely, then strain.
  • Step #8 Stir in another 3/4 c heavy whipping cream & 1 tbsp sugar, then whip to soft peaks.
  • Step #9 Cover up & put in the fridge until ready to serve.
  • Step #10 Note: Nutritional analysis is per serving.
