Windy Point Inn Spanish Frittata Recipe

Ingredients
  • 2 c milk
  • 9 large eggs
  •  Fruit salsa (recipe follows)
  •  Fresh cilantro sprigs
  • 1/4 c sliced fresh Anaheim chili
  • 1 tsp seasoned or plain salt
  • 1 c (4 oz.) shredded jack cheese
  • 1 c (4 oz.) shredded cheddar cheese
  • 1/2 lb cheese onion or cheese jalapeño bread, cut into 1/2-inch cubes
  • 2 tbsps sliced parsley
  • 1/4 c sliced fresh cilantro
  • 1 can (7 oz.) sliced green chilies
  •  Avocado slices
  • 1/2 c sliced onion

Directions
  • Step #1 Spread bread evenly in a buttered 9- by 13-inch pan.
  • Step #2 In a bowl, beat eggs & milk just to mix.
  • Step #3 Add jack cheese, sliced cilantro, cheddar cheese, canned chilies, fresh chili, parsley, onion, & salt.
  • Step #4 Pour evenly over bread.
  • Step #5 Cover up & chill at least 8 hrs or overnight.
  • Step #6 Uncover & bake in a 350° oven until center barely jiggles when carefully shaken & top is lightly browned, about 45 mins.
  • Step #7 Garnish servings with cilantro sprigs & avocado slices.
  • Step #8 Add fruit salsa to taste.
