Old-fashioned Buttermilk Crumb Cake Recipe

Ingredients
  • 1/8 tsp salt
  • 3/4 c sugar
  • 3 tbsps sliced walnuts
  • 2 tbsps vegetable shortening
  •  Crumb mixture:
  •  Cake:
  • 2 (1-oz) slices white bread
  • 1/2 tsp baking powder
  • 2 c sifted cake flour
  • 2 tsps vanilla extract
  • 1 c low-fat buttermilk
  •  Cooking spray
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 2 tbsps sugar
  • 1 tsp grated orange rind
  • 2 tsps butter, melted

Directions
  • Step #1 Preheat oven to 325°.
  • Step #2 To prepare crumb mixture, place the bread in a food processor/blender; pulse 10 times or until coarse crumbs form to measure 3/4 c.
  • Step #3 Combine breadcrumbs, walnuts, & next 3 ingredients (walnuts through cinnamon) in a small bowl.
  • Step #4 To prepare cake, baking powder, mix the flour, baking soda, & salt in a medium bowl.
  • Step #5 Combine 3/4 c sugar, rind, & vanilla In a large-ish bowl, shortening, & beat with a mixer at high speed until well-mixed.
  • Step #6 Add the flour mixture to the shortening mixture alternately with buttermilk, beginning & ending with the flour mixture.
  • Step #7 Spread the batter into an 8-inch square baking pan coated with cooking spray.
  • Step #8 Sprinkle top the batter with the crumb mixture.
  • Step #9 Bake at 325° for 45 mins or until cake begins to pull away from sides of pan.
