Apple-walnut Buttermilk Pancakes Recipe

Ingredients
  • 2 tsps baking powder
  • 1 large egg
  • 1/2 c milk
  • 3/4 c buttermilk
  • 1 tsp sugar
  • 1/2 c sliced walnuts
  • 1/2 tsp salt
  • 1 c all-purpose flour
  • 2 tbsps butter, melted & cooled
  • 1 peeled & sliced firm apple (such as Granny Smith)
  • 1 tsp baking soda
  • 1/4 tsp cinnamon

Directions
  • Step #1 Whisk together first 5 ingredients In a large-ish bowl.
  • Step #2 Combine buttermilk, milk, egg, & butter in a separate bowl; add to flour mixture, & whisk just until mixed.
  • Step #3 Add apple, walnuts, & cinnamon to batter, & fold in carefully.
  • Step #4 Transfer to a large measuring c, & let this stand 10 mins.
  • Step #5 Pour 3 to 4 tbsps of batter onto a hot, lightly greased griddle or nonstick pan.
  • Step #6 Cook until pancakes are covered with bubbles & edges turn brown.
  • Step #7 Turn & cook other side 2 mins or until golden brown.
