Stuffed French Toast Recipe

Ingredients
  • 3 c 1% low-fat milk
  •  Cooking spray
  • 1 (8-oz) block fat-free cream cheese, softened
  • 1/8 tsp ground nutmeg
  • 1 (8-oz) block 1/3-less-fat cream cheese, softened
  •  Bottled cinnamon-sugar (optional)
  • 1 c sugar, divided
  • 1 tbsp vanilla extract
  • 24 (1-oz) slices cinnamon-raisin bread
  • 2 c egg substitute, divided
  • 1 c half-and-half

Directions
  • Step #1 Trim crusts from bread.
  • Step #2 Arrange half of the bread in a 13 x 9-inch baking dish coated with cooking spray.
  • Step #3 Combine milk, half-and-half, 1 1/2 c egg substitute, & 1/2 c sugar In a large-ish bowl, stirring with a whisk.
  • Step #4 Pour half of milk mixture over bread in dish.
  • Step #5 Combine 1/2 c egg substitute, nutmeg, vanilla, 1/2 c sugar, & cheeses in a food processor/blender or mixer; process until smooth.
  • Step #6 Pour cream cheese mixture over moist bread in dish.
  • Step #7 Top with remaining bread; pour remaining milk mixture over bread.
  • Step #8 Cover up & put in the fridge 8 hrs or overnight.
  • Step #9 Preheat oven to 350°.
  • Step #10 Uncover & bake this at 350° for 55 mins.
  • Step #11 Let stand 10 mins before serving.
  • Step #12 Sprinkle top with cinnamon-sugar, if desired.
