Riversong Giddy-up Grits Recipe

Ingredients
  • 2 large eggs
  • 2 tbsps butter or margarine
  • 1 lb bulk pork sausage
  • 1 can (7 oz.) sliced green chilies
  • 1 clove garlic, pressed or minced
  • 1/3 c fresh cilantro leaves
  •  About 1 tsp hot sauce
  • 1/2 c sliced red bell pepper
  • 2 c (1/2 lb.) shredded sharp cheddar cheese
  • 3/4 tsp pepper
  • 1 c quick-cooking grits

Directions
  • Step #1 Crumble sausage into a 10- to 12-inch frying pan over high heat.
  • Step #2 Stir often until browned & crumbly, about 6 mins.
  • Step #3 Drain off & discard fat.
  • Step #4 To sausage, pepper, add garlic, & hot sauce to taste.
  • Step #5 Set aside.
  • Step #6 In a 2- to 3-quart pan, mix grits with 4 c water.
  • Step #7 Bring to a boil over high heat, stirring.
  • Step #8 Add butter.
  • Step #9 Cover up pan; reduce heat to low.
  • Step #10 Stir often until grits are tender, 5 to 6 mins.
  • Step #11 In a large bowl, beat eggs to mix.
  • Step #12 Stirring, sausage mixture, chilies, add cheese, & grits.
  • Step #13 Pour mixture into a buttered shallow 9- by 13-inch baking dish or 2 1/2- to 3-quart casserole.
  • Step #14 Bake, uncovered, in a 350° oven until lightly browned, 40 to 45 mins.
  • Step #15 Let stand about 5 mins.
  • Step #16 Sprinkle top with red bell pepper & cilantro.
  • Step #17 Cut into pieces & serve this with a wide spatula.
