Applesauce, Bran, And Oatmeal Muffins Recipe

Ingredients
  • 1/4 tsp salt
  • 3/4 c wheat bran
  • 1 1/4 c all-purpose flour
  • 1/2 c raisins
  • 1 tbsp light-colored corn syrup
  • 1 c applesauce
  • 1 large egg
  • 1 tsp ground cinnamon
  • 1/2 c fat-free milk
  • 1 tbsp vegetable oil
  • 1 tsp baking powder
  • 1/2 c packed brown sugar
  • 3/4 tsp baking soda
  • 1 c quick-cooking oats
  •  Cooking spray

Directions
  • Step #1 Preheat oven to 375°.
  • Step #2 Lightly spoon flour into dry measuring c; level with a knife.
  • Step #3 Combine flour & the next 7 ingredients (flour through salt) in a medium bowl.
  • Step #4 Stir in raisins; make a well in center of mixture.
  • Step #5 Combine applesauce & next 4 ingredients (applesauce through egg); stir well with a whisk.
  • Step #6 Add to flour mixture, stirring just until moist.
  • Step #7 Spoon the batter into 12 muffin c coated with cooking spray.
  • Step #8 Bake at 375° for 18 mins or until the muffins spring back when touched lightly in center.
  • Step #9 Remove muffins from pans as soon as possible; cool on a wire rack.
  • Step #10 Note: Before freezing, let the muffins cool completely on a wire rack.
  • Step #11 Store them in a heavy-duty zip-top plastic bag in your freezer for up to a month.
