Southern Brunch Casserole Recipe

Ingredients
  • 2 c soft whole wheat breadcrumbs (4 slices bread)
  • 4 c (16 oz) shredded sharp Cheddar cheese
  • 3 tbsps butter or margarine, melted
  • 1/4 c all-purpose flour
  • 1 tsp dried Italian seasoning
  • 1/4 c butter or margarine
  • 1 c milk
  • 1/2 tsp pepper
  • 1 c half-and-half
  • 2 large baking potatoes, unpeeled & cubed
  • 12 hard-cooked eggs, sliced
  • 1 lb bacon, cooked & coarsely crumbled
  •  Garnish: fresh herbs

Directions
  • Step #1 Cook potatoes in boiling water to cover In a large-ish saucepan 15 mins or until just tender.
  • Step #2 Drain & let cool.
  • Step #3 Melt 1/4 c butter in a heavy saucepan over medium-low heat; add flour, stirring until smooth.
  • Step #4 Cook, stirring constantly, 1 min.
  • Step #5 Gradually add milk & half-and-half; cook over med-heat/flame, stirring constantly, until thickened & bubbly.
  • Step #6 Add cheese, & pepper, Italian seasoning, stirring constantly until cheese melts.
  • Step #7 Remove from heat.
  • Step #8 Layer half each of egg slices, bacon, & cheese sauce in a lightly greased 13" x 9" x 2" baking dish.
  • Step #9 Top with potatoes.
  • Step #10 Top with remaining egg slices, bacon, & cheese sauce.
  • Step #11 Combine breadcrumbs & 3 tbsps melted butter; sprinkle it over casserole.
  • Step #12 Cover up & chill overnight, if desired.
  • Step #13 Remove casserole from refrigerator.
  • Step #14 Let stand at about room temp 30 mins.
  • Step #15 Bake, uncovered, at 350° for 30 mins or until thoroughly heated.
  • Step #16 Garnish, if desired.
  • Step #17 Note: A mushroom slicer makes a neat & easy job of slicing hard-cooked eggs for this recipe.
