Pecan Pancakes Recipe

Ingredients
  • 1 tsp salt
  • 1/2 c sliced toasted pecans
  • 1 c all-purpose flour
  • 1 tbsp baking powder
  • 1 1/8 c milk (use more for thinner batter)
  • 1 large egg, lightly beaten
  • 2 to 4 (4 1/2- to 5-inch) heavy metal cookie cutters
  • 2 tsps sugar

Directions
  • Step #1 Combine flour & next 3 ingredients in a bowl; whisk in 1 1/8 c milk & egg, whisking until mixture is mixed.
  • Step #2 Stir in pecans.
  • Step #3 Grease heavy metal cookie cutters lightly, & place on hot (375°), lightly greased griddle.
  • Step #4 Pour pancake batter (approximately 2 tbsps) into each cutter.
  • Step #5 Using tongs, remove cutters after 1 min (cutters will be hot); cook pancakes 2 more mins.
  • Step #6 Turn pancakes over, & cook 2 to 3 more mins or until done.
