Vegetable And Cheddar Frittata Recipe

Ingredients
  • 2 tbsps sliced fresh cilantro or parsley
  • 1 c frozen corn, thawed
  • 4 large egg whites
  • 12 green onions, trimmed
  • 1/2 tsp salt, divided
  • 1/2 c (2 oz) shredded reduced-fat cheddar cheese, divided
  • 3 large eggs
  •  Cooking spray
  • 1/4 tsp black pepper
  • 16 grape or cherry tomatoes, halved (about 3/4 c)

Directions
  • Step #1 Preheat broiler.
  • Step #2 Combine cilantro or parsley, 1/4 tsp salt, & next 3 ingredients (salt through eggs) in a bowl; stirring with a whisk.
  • Step #3 Cut 8 green onions in half crosswise; set aside.
  • Step #4 Thinly slice remaining onions to measure 1/2 c.
  • Step #5 Heat a medium nonstick skillet coated with cooking spray over med-heat/flame.
  • Step #6 Add onion halves; cook 3 mins.
  • Step #7 Add corn; cook 1 min.
  • Step #8 Add sliced onions & tomatoes; cook 1 min.
  • Step #9 Sprinkle top with 1/4 tsp salt & 6 tbsps cheese.
  • Step #10 Pour in egg mixture; cook 3 mins or until egg mixture is almost set.
  • Step #11 Tilt pan & carefully loosen edges of frittata portion with a spatula; allow uncooked portion to flow underneath cooked portion.
  • Step #12 Wrap handle of pan with foil wrap; broil 2 mins or until egg mixture is set.
  • Step #13 Sprinkle top with 2 tbsps cheese.
  • Step #14 Cut into 4 wedges (serving size: 1 wedge).
