Fresh Corn-and-pasta Frittata Recipe

Ingredients

1 c sliced green onions
1/4 c grated Parmesan cheese
1 c cooked angel hair pasta
1 c presliced mushrooms
1 1/4 c egg substitute
1/4 c (1 oz) shredded provolone cheese
1/4 c dry breadcrumbs
3/4 c fresh corn kernels (about 1 ear)
Green onions (optional)
1 tsp olive oil

Directions

Step #1 Preheat oven to 450°.
Step #2 Combine first 3 ingredients in a small bowl.
Step #3 Stir well; set aside.
Step #4 Wrap handle of a large nonstick skillet with foil wrap.
Step #5 Heat oil in skillet over medium-high heat.
Step #6 Add green onions, mushrooms, & corn; sauté 4 mins or until soft.
Step #7 Stir in pasta until well-mixed.
Step #8 Add egg substitute mixture; cook 2 mins or until set around edges.
Step #9 Sprinkle top with Parmesan.
Step #10 Bake at 450° for 5 mins or until center is set.
Step #11 Garnish with green onions, if desired.
