Fresh Corn-and-pasta Frittata Recipe

Ingredients
  • 1 c sliced green onions
  • 1/4 c grated Parmesan cheese
  • 1 c cooked angel hair pasta
  • 1 c presliced mushrooms
  • 1 1/4 c egg substitute
  • 1/4 c (1 oz) shredded provolone cheese
  • 1/4 c dry breadcrumbs
  • 3/4 c fresh corn kernels (about 1 ear)
  •  Green onions (optional)
  • 1 tsp olive oil

Directions
  • Step #1 Preheat oven to 450°.
  • Step #2 Combine first 3 ingredients in a small bowl.
  • Step #3 Stir well; set aside.
  • Step #4 Wrap handle of a large nonstick skillet with foil wrap.
  • Step #5 Heat oil in skillet over medium-high heat.
  • Step #6 Add green onions, mushrooms, & corn; sauté 4 mins or until soft.
  • Step #7 Stir in pasta until well-mixed.
  • Step #8 Add egg substitute mixture; cook 2 mins or until set around edges.
  • Step #9 Sprinkle top with Parmesan.
  • Step #10 Bake at 450° for 5 mins or until center is set.
  • Step #11 Garnish with green onions, if desired.
