White Chocolate-macadamia Nut Muffins Recipe

Ingredients
  • 3/4 c coarsely sliced white chocolate (we tested with Bakers Premium white chocolate)
  • 3 tbsps vegetable oil
  • 2 1/2 c biscuit & baking mix
  • 3/4 c half-and-half
  • 2 tsps vanilla extract
  • 1/2 c sugar
  • 1/2 c coarsely sliced macadamia nuts
  • 1 large egg, lightly beaten

Directions
  • Step #1 Combine baking mix & sugar In a large-ish bowl; stir in the chocolate & nuts.
  • Step #2 Make a well in center of mixture.
  • Step #3 Combine half-and-half & remaining 3 ingredients; add to dry ingredients, stirring just until dry ingredients are moistened.
  • Step #4 Spoon into greased muffin pans, filling two-thirds full.
  • Step #5 Bake at 400° for 11 to 12 mins or until a wooden pick inserted into center comes out clean.
  • Step #6 Remove from pans as soon as possible.
  • Step #7 Hot Chocolate Muffins: Omit whtie chocolate & macadamia nuts.
  • Step #8 Decrease baking mix to 2 1/4 c & half-and-half to 1/2 c.
  • Step #9 Stir in 2 tbsps cocoa, 3/4 c semisweet chocolate mini-morsels, 1/4 c chocolate syrup, & 1/4 c sliced almonds.
  • Step #10 Bake as directed.
  • Step #11 Yield: 1 dozenHam & Cheese Muffins: Omit sugar, chocolate, nuts & vanilla.
  • Step #12 Add 3/4 c sliced ham (for maximum flavor, use country ham) & 3/4 c shredded sharp cheddar cheese.
  • Step #13 Bake as directed.
