Ingredients
1/2 c all-purpose flour
1 c cooked wild rice
1/4 c butter or margarine, melted
3 green onions, sliced
1 tbsp baking powder
1 1/4 c milk
1 tsp salt
1/8 tsp ground red pepper
2 large eggs, separated
Garnish: green onion slivers
Directions
Step #1 Combine first 4 ingredients in a medium bowl; add milk & butter, whisking until mixed.
Step #2 Stir in egg yolks until mixed.
Step #3 Beat egg whites at medium speed with an electric mixer until stiff peaks form.
Step #4 Fold egg whites, rice, & green onions into flour mixture.
Step #5 Pour about 1/4 c batter for each pancake onto a hot, lightly greased griddle.
Step #6 Cook pancakes 2 to 3 mins or until tops are covered with bubbles & edges look cooked; turn & cook 2 to 3 mins.
Step #7 Garnish, if desired.
