Wild Rice Pancakes Recipe

Ingredients
  • 1/2 c all-purpose flour
  • 1 c cooked wild rice
  • 1/4 c butter or margarine, melted
  • 3 green onions, sliced
  • 1 tbsp baking powder
  • 1 1/4 c milk
  • 1 tsp salt
  • 1/8 tsp ground red pepper
  • 2 large eggs, separated
  •  Garnish: green onion slivers

Directions
  • Step #1 Combine first 4 ingredients in a medium bowl; add milk & butter, whisking until mixed.
  • Step #2 Stir in egg yolks until mixed.
  • Step #3 Beat egg whites at medium speed with an electric mixer until stiff peaks form.
  • Step #4 Fold egg whites, rice, & green onions into flour mixture.
  • Step #5 Pour about 1/4 c batter for each pancake onto a hot, lightly greased griddle.
  • Step #6 Cook pancakes 2 to 3 mins or until tops are covered with bubbles & edges look cooked; turn & cook 2 to 3 mins.
  • Step #7 Garnish, if desired.
