Step #1 Preheat oven to 350°.
Step #2 Coat a 13 x 9-inch baking pan with cooking spray; dust with 2 tsps all-purpose flour.
Step #3 Lightly spoon 2/3 c all-purpose flour & whole-wheat flour into dry measuring c; level with a knife.
Step #4 Combine flours, & salt in a small bowl, baking powder, stirring with a whisk.
Step #5 Combine sugar, oil, milk, & eggs In a large-ish bowl; beat at high speed of a mixer until smooth.
Step #6 Add flour mixture, beating at lowish speed until mixed.
Step #7 Fold in granola & fruit.
Step #8 Spoon batter into prepared pan.
Step #9 Sprinkle top with coconut.
Step #10 Bake at 350° for 20 mins or until golden.
Step #11 Cool on a wire rack.
