Chewy Coconut-granola Bars Recipe

Ingredients
  • 1 tsp baking powder
  • 2 large eggs
  • 1/2 tsp salt
  • 2/3 c all-purpose flour
  • 3/4 c sliced dried mixed fruit (such as Marian Premium Tropical Medley)
  • 1/3 c whole-wheat flour
  • 2 tsps all-purpose flour
  • 1/4 c vegetable oil
  • 1 1/2 c low-fat granola without raisins (such as Kellogg's)
  • 2 tbsps fat-free milk
  • 1 1/4 c packed brown sugar
  • 1/2 c flaked sweetened coconut
  •  Cooking spray

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Coat a 13 x 9-inch baking pan with cooking spray; dust with 2 tsps all-purpose flour.
  • Step #3 Lightly spoon 2/3 c all-purpose flour & whole-wheat flour into dry measuring c; level with a knife.
  • Step #4 Combine flours, & salt in a small bowl, baking powder, stirring with a whisk.
  • Step #5 Combine sugar, oil, milk, & eggs In a large-ish bowl; beat at high speed of a mixer until smooth.
  • Step #6 Add flour mixture, beating at lowish speed until mixed.
  • Step #7 Fold in granola & fruit.
  • Step #8 Spoon batter into prepared pan.
  • Step #9 Sprinkle top with coconut.
  • Step #10 Bake at 350° for 20 mins or until golden.
  • Step #11 Cool on a wire rack.
